Log Fire Cupcakes recipe (Makes 9) To make the cupcakes, you will need: 2oz (50g) of margarine 2oz (50g) of self-raising flour 2oz (50g) of sugar 1 egg 1/2 teaspoon of baking powder 2 drops of vanilla essence a mixing bowl a wooden spoon a baking tray 9 paper bun cases 2 teaspoons To make the butter icing (frosting), you will need: 3oz (75g) of margarine 2oz (50g) of icing sugar (confectioners' sugar) 1oz (25g) of cocoa powder a mixing bowl a wooden spoon To decorate your cupcakes you will need: 2 teaspoons 6 Cadbury's Flakes 2 red jelly sweets (jelly candies) 2 orange jelly sweets (jelly candies) 2 yellow jelly sweets (jelly candies) a sharp knife* Turn your oven on to 160°C. Put the 2oz (50g) of margarine, the flour, the sugar, the egg, the baking powder, and the vanilla essence into a mixing bowl, and mix them together thoroughly with a wooden spoon. Arrange the bun cases on the baking tray and divide the cake mixture into them using the two teaspoons. (The second teaspoon is to scrape the cake mixture off the first teaspoon into the bun cases.) Bake the cupcakes in the pre-heated oven for 15 to 20 minutes until they are golden brown. Take them out of the oven and let them cool thoroughly. Put the 3oz (75g) of margarine, the icing sugar, and the cocoa powder into the other mixing bowl, and mix them together thoroughly with a wooden spoon. Use two teaspoons (the same way as you did with the cake mix) to put some butter icing on top of each cupcake. Break up the Cadbury's Flakes into fairly large pieces, and pile several pieces on top of each cupcake to look like logs on a fire. Cut the jelly sweets into 'flame' shapes, and push the 'flames' here and there between the Cadbury's Flake 'logs'. Your Log Fire Cupcakes are now ready to serve. *Note: Cutting the jelly sweets needs a sharp knife and therefore adult assistance for younger children.
